Double Chocolate Chip Banana Bread

August 3, 2012 By Steve Dunn Leave a Comment

Double Chocolate Chip Banana Bread

Over the years we've posted three different banana bread recipes here on Oui, Chef.  First was this, our favorite straight up version.  Then came a cocoa variant from my friend Sally Sampson at Chop Chop Magazine, and finally a Nutella version I whipped up to put an end to a large tub of Nutella that Arthas and I bought while at Chelsea Market in NYC.

Most food bloggers would be content with sharing three different varieties of a dish, but no, not us.  As we continue to do with brownies, we are constantly looking for exciting new twists on one of our favorite treats, banana bread.  Bananas are something that we always have on hand in the kitchen, and when they get a bit long in the tooth we either craft a bread out of them, or peel, cut and freeze them for use in morning smoothies.  Last week, when I needed to deal with 2 leftover bananas, I found our frozen banana remnant bag full to capacity, so bread it was.

Mango Soufflé with Coconut-Lime Crème Anglaise

Mango Soufflé with Coconut-Lime Crème Anglaise

If you are looking for something special and sweet to make your mom for Mother's Day, have I got a dish for you.  After taking a few months away from Food52's weekly recipe contests, I decided to hop back in this week and crafted this dish to enter into their contest for "your best mangoes".  To be honest, I'm not the biggest fan of mangoes, I mean I love their flavor but find that carving around the monster pit in their center to be a bit of a pain.  Plus, it seems that there is so much waste once the fruit has been peeled and the pit removed.  Anyway, for the two that I carved up for this dish I was very patient, extracting all of the goodness from them I could and I have to say that in the end my efforts paid off in a BIG way.

Triple Chocolate Cheesecake

Triple Chocolate Cheesecake

You gotta love birthdays around here.  They may not be very good for our waistlines, but they sure are tasty!  Our lovely young Peyton just turned 15, and as is our custom when one of us tacks on another year, we (oui) kitchen slaves craft a meal and cake of choice for the lucky celebrant.  For her birthday meal Peyton chose an Asian theme with a Ming Tsai crab maki roll, and a Wagamama chicken gyoza, and for dessert, this insanely good chocolate cheesecake.

Fig and Chocolate Bars

Fig and Chocolate Bars

These little lovelies were inspired by my need to do a little pantry cleaning last weekend.  They were the perfect vehicle for knocking-off the last few dried figs we had laying about, as well as an unopened jar of fig preserves I bought at Hediard while living in Paris (I don't even want to tell you how long ago that was).  Any of you who have been to Hediard know they sell foodstuffs of only the highest quality (with prices to match), so I am pleased to report that even after YEARS tucked away in the deepest recesses of our pantry, the jam was still superb.  Whew……

GF Chocolate Cupcakes with Peanut Butter Frosting

GF Chocolate Cupcakes with Peanut Butter Frosting

These little bad boys came about as the result of my volunteering to bring a sweet treat to a Cooking Matters board meeting I was attending last week. You see, one of my fellow board members is about to go on maternity leave to have her first child, so it was decided that we'd have a little baby shower for her at last week's meeting.

As coming up with cool baby gifts is not my strong suit, I offered to bring the eats.  My first thought was to make a batch of these Chocolate-Peanut Butter Cupcakes that I had found on Joy the Baker's site, but upon learning that one of the board members can't tolerate gluten, I had to pivot quick and work up another plan.

A Chocolate Lovers Tart

A Chocolate Lovers Tart

On the ocassion of our college guy gracing us with his presence at the beginning of his spring break, I decided to pull out all the stops for dinner this past Saturday.  We started with his all-time favorite, steak with sauce bernaise to which we added a new treat, creamed kale (recipe to follow soon), and to finish off the feast this awesome chocolate tart.

Chocolate Mint Cookies

Chocolate Mint Cookies

When I was growing up there were only two kinds of Girl Scout Cookies I really liked, the Peanut Butter Sandwich cookies and the Thin Mints.  I could still eat a box of the peanut butter ones at a single go, but over time I've grown away from the Thin Mints, in fact, if I'm to be totally honest here I'm not a big fan of many combinations of mint and chocolate.

I know….I'm a weirdo.

Blueberry Streusel Cake

Blueberry Streusel Cake

I know this cake is a touch out of season but fact is we've been drowning in blueberries lately, so much so that I felt compelled to create this little beauty as a means to help work through our overstock.

You see, Muppet's been on a bit of a blueberry bender as of late, begging for them at every turn.  Shocked by the fact that one of our kids was (no-kidding) ASKING for fresh fruit, and not wanting to blow a food-hero opportunity while actually buying something healthy for them, my wife and I each purchased mondo boxes of the lovelies last week.  As fate would have it, the day after we presented our young berry fiend with her fruit-booty she had upper braces slapped on her teeth and promptly lost her taste for just about everything….well, except maybe for chocolate.  Poor child.

Almost Teddies Apple Cake and an OXO Egg Beater Giveaway!

Almost Teddies Apple Cake and an OXO Egg Beater Giveaway!

A few weeks back I had the good fortune to attend the Boston book launching party for the The Food52 Cookbook .  My friend Emily (fiveandspice for all you Food52ers) and her husband hosted a pot-luck gathering where each guest made a dish from the book to bring, it was great fun and a delicious afternoon.  As you might imagine from a gathering of such food fanatics, we brought way more food than we needed for the gang assembled.  In fact, as the afternoon wore on I started to get a little concerned that we had not properly paced ourselves and would be unable to have a go at the beautiful desserts decorating the sideboard in their dining room.

A lesser group would have called it a day I’m sure, what with the sheer volume of savory tarts, salads, dips, breads, and charcuterie that we all consumed.  Many would have slipped into a food coma and curled up in the corner for a little snooze, but not this stalwart group.  No, the siren’s song of cakes and cookies took care of that, and as we emptied the last bottle of wine, our hostess took her leave and retired to the kitchen to gather things for dessert.

3 Layer Guinness – Chocolate Cake

3 Layer Guinness – Chocolate Cake

A page is turned, a chapter ended.

Ever since I was a student at LCB and learned to make a Bûche Pistache, a delicious chocolate-pistachio log shaped cake, it has been Arthas’ choice of birthday cake.  I still clearly remember my initial shock when a few months after he had tasted the one I made and brought home from class, he asked that I make another for his birthday.
