PB & J  Bars


Here's a treat designed to please the little kid in all of us.  I don't know about the rest of you, but I still have days where I crave a peanut butter and jelly sandwich (on white bread, of course) with a handful (or three) of crispy potato chips and a tall glass of cold milk for lunch.  It was my favorite lunch as a kid, and still satisfies like nothing else can to this day.

Thankfully I've given up my childhood vice of eating "Peter Pan" creamy straight from the jar with a spoon (it wasn't a good look on me), but I bet I still eat a good old-fashioned PB & J about once a month.  If you haven't had one in years do yourself a favor and make one soon, it will make you smile.

Flapjacks

As you can tell by this picture, these are not the flapjacks we're accustomed to here in the States.  Here, when we talk about "flapjacks" or "hotcakes" or "griddle cakes", we're tossing about well known alias' for pancakes, those golden vehicles famed for delivering obscene amounts of melting butter and maple syrup into our systems.  Why do we have so many names for such a simple dish?  Who knows…….probably just to confound foreign visitors.

I don't know about you all, but it seems like half of our food budget these days is spent on "healthy" snacks that the kids can bring to school for lunch or after-school sports.  Granola bars have long been a favorite of the gang, and with four kids shoving them into their backpacks as they race out the door each morning, we go through a ton of them each week.

I've experimented over the years with making homemade versions, but none have ever turned out that well.  They were either so sticky that you felt like you needed a bath after eating one, or so dry and boring that munching on one seemed only a small step removed from strapping on a horse's feed bag for a snack.  There had to be a better way……

I have been searching some time now for a world class corn muffin recipe with which to satisfy our young corn lovin' diva, Muppet.  For as long as I've known her, her favorite snack, bar none, has been a really well made corn muffin or piece of corn bread.  Panera's corn muffin-top is the gold standard by which all others are measured, though she's also a fan of Trader Joe's box mix that we make at home.  That's provided of course that someone take the time to sift the whole corn kernels from the mix before proceeding to add the wet ingredients.  You see, this girl won't abide whole kernels in her muffins.

Ever have a hankerin' for chicken wings?  

Yeah, me too….all the time.

Normally I'm a buffalo wing kind of guy, having been schooled in the fine art of hot-wings while an undergrad  student at Syracuse about 400 years ago.  My time there coincided with the birth of the buffalo wing craze and there was a local joint called "Ventura's Wings and Things" that delivered killer wings that were always part of our weekend feasts.

Those of you who are regulars here have recently seen a recipe for an awesome Black Coffee Ice Cream, then a few days later one for sublime Macarons.  Well, today you see what glory can be achieved by combining these two into one of the best ice cream sandwiches you'll ever eat.  Inspired by Jeni Britton Bauer's example in her terrific cookbook Jeni's Splendid Ice Creams at Home , we've combined her Black Coffee Ice Cream (along with some store bought vanilla and chocolate for a little variety) with some super-sized cinnamon macarons to make a few seriously dangerous sandwiches.

One of the more recent additions to my ever-growing pile of cookbooks, is one I "won" at Share Our Strength's Baltimore "Taste of the Nation" when I attended last Fall.  The book, Jeni's Splendid Ice Creams at Home, was one of about a dozen that I won in the silent auction part of the fundraiser.  Needless to say, I'm glad I'm a light packer because I required all sorts of extra room in my suitcase to accommodate the book booty for my trip home.  I half expected the TSA folks to check my bag for a dismembered body, I mean how else could I explain a weekend bag weighing in at 100+ pounds.

Chocolate Mint Cookies

When I was growing up there were only two kinds of Girl Scout Cookies I really liked, the Peanut Butter Sandwich cookies and the Thin Mints.  I could still eat a box of the peanut butter ones at a single go, but over time I've grown away from the Thin Mints, in fact, if I'm to be totally honest here I'm not a big fan of many combinations of mint and chocolate.
